5th International Summer School

The International Competence Centre on Meat Quality at the Max Rubner-Institute in Kulmbach is inviting for the 5th international summer school from 22.-25. September 2015. The summer school is an intensive 4 days program filled with theoretical lectures as well as practical or demonstration exercises, focusing on important subjects related to quality of meat or meat products.

This year’s summer school is titled thermal processing of meat and meat products: from molecular gastronomy to extended shelf-life. What do we know about the molecular changes occurring in meat during heating? What is their impact on the nutritional value of meat? Can food fraud still be detected in heated products?
